This recipe for Papaya Seed Dressing is a delicious and unique way to add a different taste to your green salads. The black, round papaya seeds are edible, and have a mild peppery and bitter taste. I find that it blends well with green salads.
I have also used papaya seeds as a garnish on green salads.
PAPAYA SEED DRESSING
1 cup oil
1 cup vinegar
1/4 cup sugar
1 tsp. dry mustard
1/4 cup papaya seeds from a fresh papaya
1 tsp. salt
Put all ingredients in a blender and blend until the papaya seeds are crushed into the consistency of ground pepper. It is ready to serve on a green salad.
